Ingredients:
- 1/2 cups - butter
- 3/4 cups - sugar
- 1 cups - coconut (angel flake)
- 1 cups - cooked mashed carrots
- 2 - eggs
- 1/4 teaspoons - baking soda
- 2 teaspoons - baking powder
- 1/4 teaspoons - salt
- 3 cups - flour
- 1 - large orange (juice from)
- 1 boxes - powdered sugar
- - grated orange rind
- - coconut flakes for topping
Directions:
For cookies, mix together all ingredients in order. Bake for 10 minutes at 350 degrees F.
For icing, mix together the juice from the orange with the orange rind and powdered sugar.
Frost the cookies and sprinkle with coconut.
