Ingredients:
- 4 slices - bread (1 oz. each)
- 3 tablespoons - butter or stick margarine melted
- 1/3 cups - granulated sugar
- 1/3 cups - packed brown sugar
- 1 teaspoons - ground cinnamon
- 1/8 teaspoons - salt
- 1/8 teaspoons - ground allspice
- 6 cups - sliced peeled Granny Smith apples
- 1/2 cups - apple cider
- 1 teaspoons - grated lemon rind
- 2 tablespoons - fresh lemon juice
- 1 teaspoons - vanilla extract
- 4 cups - vanilla low-fat ice cream
Directions:
1. Preheat oven to 350 degrees F.
2. Place bread in a food processor or blender; process until finely ground to measure 2 cups. Combine breadcrumbs and butter; set aside.
3. Combine sugars and cinnamon, salt and allspice in a large bowl. Stir in apples along with the cider, lemon rind, lemon juice, and vanilla extract.
4. Spoon 3 cups apple mixture into an 8-inch baking dish. Sprinkle with 1 cup breadcrumb mixture. Top with remaining apple and breadcrumb mixtures.
5. Bake at 350 degrees F for 1 hour and 15 minutes or until bubbly. Cool on a wire rack.
6. Spoon into 8 serving bowls; top each with 1/2 cup ice cream.
