Avocado Eggs Cups

Ingredients:

  1. 1 - medium avocado
  2. 2 - eggs
  3. 1 pinchs - salt
  4. 1 pinchs - black pepper
  5. 1 tablespoons - chives to garnish (optional)

Directions:

1. Cut an avocado in half and remove the pit. If needed, depending on the size of the pit, remove some avocado flesh to make room for the egg.

2. Arrange avocados in a single layer on a baking dish. Crack an egg into each half of the avocado and season with salt and pepper.

3. Bake at 425F for 10-15 minutes or until eggs are cooked. Remove from oven and garnish with chopped chives.
