Ingredients:
- 4 - Whole-grain tortillas
- 1 pounds - Fresh tilapia fillets
- 1/2 - Fresh lime
- 3/4 teaspoons - Kosher salt
- 1/8 teaspoons - Ground black pepper
- 1/2 cups - Plain, low-fat, Greek-style yogurt
- 1 - Small jalapeno pepper Minced
- 1/4 teaspoons - Dried oregano
- 1/4 teaspoons - Ground cumin
- 1 cups - Cabbage Shredded
- 1 - Avocado Seeded and cut into slices
Directions:
ONE: Preheat oven to 350 degrees. Stack tortilla's and wrap them in a sheet of aluminum foil. Line a rimmed baking sheet with aluminum foil. Place fish fillets on baking sheet and squeeze lemon juice evenly over each. Sprinkle with salt and black pepper. Place tortillas and fish in oven. Remove tortillas after five minutes and set aside. Bake fish until it's cooked through, about seven to ten minutes.
TWO: While fish is baking, stir together yogurt, jalapeno pepper, oregano
and cumin. If you like a thinner sauce, stir in a tablespoon or two of water.
THREE: Break up the fish with a fork. and divide into four equal portions. Fill each warmed tortilla with shredded cabbage and fish, and top each with one-quarter of the avocado and two tablespoons of yogurt sauce.
