Baked Peppers with Ricotta and Basil

Ingredients:

  1. 3 - large peppers
  2. - olive oil
  3. 2 cups - ricotta cheese
  4. 1/2 cups - chopped basil
  5. 1/2 cups - chopped onions
  6. 1/2 cups - chopped parsley
  7. - salt and pepper
  8. 2 - eggs

Directions:

Singe the peppers, place in a plastic bag and remove skins.

Cut peppers in half and clean; drizzle with olive oil.

Mix together ricotta, basil, onions, parsley, salt and pepper. Beat in the eggs.

Fill peppers with mixture and bake at 350 degrees F for 30 minutes.

Garnish with basil leaves.
