    I bought a tube of Cooked Organic Polenta and simply sliced into 14 to 16 rounds. I hope you enjoy! Its a delicious quick alternative to mac & cheese. Had it for dinner tonight! xxx ellyn

Ingredients:

  1. - Pre cooked Polenta I used Trader Joes Organic
  2. - 1/4 lb gorgonzola dolce Cut into small pieces
  3. 1/4 cups - Parmesan Grated
  4. 1/3 cups - Coarse Breadcrumbs
  5. 1/8 pieces - Salted Butter cut into small pieces

Directions:

Preheat oven to 350. Cut polenta into approx 1" slices and arrange polenta rounds in a single layer over an oven proof dish prepared with evoo. I used a cast iron skillet. Cut gorgonzola into small pieces. Dot half of gorgonzola here & there over polenta rounds. Top with a second layer of polenta rounds and dot with remaining gorgonzola. Sprinkle with grated parmesan and breadcrumbs. Dot butter here & there over breadcrumb mixture. Season with freshly ground pepper. Bake for 20-25 minutes or until cheeses are golden brown & melted.
