Baked Salmon with Crumb topping

Ingredients:

  1. 1/8 teaspoons - pepper
  2. 2 tablespoons - butter melted
  3. 2 pounds - salmon fillet
  4. 1 cups - soft whole wheat bread crumbs
  5. 1/3 cups - sliced almonds coarsely chopped
  6. 1 tablespoons - green onion finely chopped
  7. 1 1/2 teaspoons - fresh thyme minced or 1/2 tsp dried
  8. 1/2 teaspoons - salt

Directions:

In a bowl, combine the bread crumbs, almonds, onion, thyme, salt and pepper; mix well. Add butter and toss lightly; set aside. Pat salmon dry. Place skin side down in a 15x10x1 in. baking pa coated with nonstick cooking spray. spritz salmon with nonstick cooking spray; cover with crumb mixture. Bake, uncovered, at 350 for 20-25mins or until fish flakes easily with fork.
