Banana Bread

Ingredients:

  1. 2 teaspoons - baking soda
  2. 1/4 teaspoons - salt
  3. 1 cups - shortening
  4. 3 cups - sugar
  5. 2 teaspoons - vanilla
  6. 4 - eggs
  7. 1/2 cups - buttermilk
  8. 2 cups - mashed bananas
  9. 1 cups - chopped pecans
  10. 3 1/2 cups - sifted flour

Directions:

Sift together the flour, baking soda, and salt.

Cream together the shortening, sugar, and vanilla. Add eggs one at a time, beating well after each.

Beginning and ending with dry ingredients, alternate with buttermilk, adding to creamed mixture.

Stir in bananas and pecans. Pour into greased and floured Bundt pan and bake at 325 degrees F for 1-1/2 hours. Remove and let cool 5 minutes; remove from pan.

If baking as cupcakes, bake for 55 minutes.
