Ingredients:
- 6 cups - masa harina
- 5 cups - warm water
- 2 cups - lard
- 2 teaspoons - salt
- - Cumin, onion powder, chile powder optional
Directions:
In a large bow, mix the masa harina with the water. Allow to sit for 20 minutes, then beat with an electric mixer until a dough forms.
Add salt and desired spices. In a separate bowl, whip the lard until fluffy.
Add the lard to the dough, combine well, and use immediately or refrigerate up to 24 hours.
Sweet Variation: To make dessert tamales, replace the salt in the recipe with cinnamon and sugar; then add condensed milk instead of lard. Fill the dough with roasted pecans, golden raisins, and cajeta (caramel), or other dessert filling.
