Basic Mornay Sauce

Ingredients:

  1. 1 - recipe Basic White Sauce
  2. 2 tablespoons - butter
  3. 1 cups - grated Parmesan cheese

Directions:

Prepare Basic White Sauce and remove from heat.

Cut the butter into small pieces. Stir the Parmesan cheese and butter into white sauce, beating with wooden spoon until butter is melted.

The amount of salt in white sauce may be decreased, if desired, because Parmesan cheese sometimes imparts a salty flavor.

(One recipe makes about 2 CUPS).
