Ingredients:
- 10 ounces - package of egg noodles
- 1 pounds - extra lean ground beef
- 1 cups - frozen corn
- 8 ounces - sliced mushrooms
- 1 - medium yellow onion chopped
- 1 - small green pepper chopped
- - salt and pepper to taste
- 28 ounces - can diced tomatoes
- 1 cups - shredded reduced fat cheddar cheese
Directions:
Cook noodles in salted water, then drain and set aside to stay warm.
In a skillet over medium heat, brown the ground beef; drain off any excess oil. Set cooked ground beef aside in a bowl to stay warm.
In the same skillet, saute mushrooms, onions, peppers and corn in a little bit of butter until vegetables are just tender (about 5 minutes). Season with salt and pepper to taste.
Stir in the canned tomatoes with the juice; add the cooked ground beef back to the pan with the vegetables.
Stir and heat everything together for 3 to 5 minutes or until all is well mixed and heated through.
Serve a portion of noodles, topped with some of the beef and vegetable mixture, and a little bit of shredded cheese, if desired.
