Ingredients:
- 1 pounds - Bay Scallops
- 1 tablespoons - Olive Oil
- 1 1/2 cups - Mushrooms sliced
- 1 - Small Red Bell Pepper seeded and chopped
- 1 1/2 cups - Chicken Broth or Stock
- 1/2 cups - Jarred Pesto Sauce
- 1/4 cups - Parmesan Cheese grated
- 1/4 cups - Toasted Pine Nuts
- 8 ounces - Fettuccine cooked and drained
- 1 tablespoons - Grated Lemon Peel
Directions:
1. In 12-inch nonstick skillet over medium heat, saute scallops in olive oil until golden. Remove skillet from heat; set scallops aside and keep warm. Add mushrooms and bell pepper to skillet and saute until mushrooms are browned. Add chicken broth and stir in pesto sauce. Return scallops to skillet. Stir in Parmesan and pine nuts.
2. Blend fettuccine and lemon peel. Arrange on serving platter. Top with scallop mixture.
3. If desired, provide additional Parmesan Cheese to be added when serving.
