Beef Brisket with Sweet Garlic and Caramelized Onions

Ingredients:

  1. 7 pounds - brisket
  2. 14 - large garlic cloves minced
  3. 2 teaspoons - dry mustard
  4. 1 tablespoons - paprika
  5. 1 1/2 teaspoons - salt
  6. 1 teaspoons - pepper
  7. 2 - medium onions peeled, halved
  8. 2 cups - beef stock
  9. 4 - medium onions halved
  10. 3 tablespoons - unsalted butter
  11. 1 teaspoons - sugar
  12. - salt and pepper
  13. 1 1/2 tablespoons - flour
  14. 1/2 teaspoons - dry mustard
  15. 3 tablespoons - tomato paste
  16. 2 tablespoons - dry vermouth
  17. 3 tablespoons - butter cut into pieces

Directions:

For Brisket:
Mix minced garlic and spices in small dish; rub mixture over brisket. Slice onions in processor; spread half on bottom of foil in roasting pan. Place brisket on top of onions and cover with remaining onions. Pour stock in bottom of foil (not over meat); fold brisket up in foil, cover and bake about 4 to 5 hours. Cool and refrigerate.

For Caramelized Onions:
Slice the onions in food processor. Saute in butter; sprinkle with sugar, salt and pepper and cook for about 20 minutes.

For Sauce:
Discard fat from brisket. Place all drippings in processor and add flour, tomato paste, vermouth and mustard. Put in a pan; heat to thicken and add butter.

To serve: Top brisket with caramelized onions; pour sauce over all and serve hot.
