Ingredients:
- 1/2 - lemon - juice only
- 1 teaspoons - sugar
- 1 teaspoons - Tabasco
- 1 cups - chopped romaine
- 4 slices - butter brioche bread
- 1 pounds - applewood smoked bacon
- 1 - large white onion
- 1/4 cups - brown sugar
- 1/4 cups - garlic
- 1 teaspoons - cayenne pepper
- 1/4 teaspoons - cinnamon
- 1/4 teaspoons - nutmeg
- 1/2 cups - bourbon
- 1/4 cups - maple syrup
- 1 pints - cherry tomatoes
- 1 tablespoons - grapeseed oil
- - salt and white pepper to taste
- 1 - half sheet pan with rack
- 1/2 cups - mayonnaise
- 5 cloves - garlic pressed and pureed
Directions:
SLOW ROASTED TOMATOES:
1. Cut the tomatoes in half and separate on sheet pan. Lightly season with grapeseed oil, salt and pepper.
2. Roast in a 200 degree oven for 2-1/2 hours.
ASSEMBLY:
1. Take four nice pieces of butter brioche bread and spread bacon jam over bread.
2. Grill on side without jam.
3. Place bread on cookie sheet and bake in oven for 10 minutes.
4. After bread is done, cut into bite-sized pieces.
5. Take mini Mason jar and fill with bread and tomatoes; top with sauce and garnish.
