    For best onion flavor, carmalize the onions to create a rich creamy texture and milk flavor without the punch bite of sauteed onions--plus produces an appealing golden caramel color. To do this: In skillet cook thinly sliced onions in butter or olive oil (about 2 Tbs per pound of onions) over low heat 30-40 minutes or until golden in color and softened, stirring occasionally. Unlike sauteing (cooking quickly over high heat), this low-and-slow method allows for the release of the natural sugars in the onions, which is perfect for these savory-sweet bites.

Ingredients:

  1. 1 - refrigerated rolled piecrust
  2. 1 cups - thinly sliced cooked yellow onions
  3. 2 teaspoons - minced fresh thyme
  4. 1 teaspoons - balsamic vinegar
  5. 1 cups - whole-berry cranberry sauce
  6. 1 - orange zested & juiced
  7. 1/2 cups - crumbled blue cheese
  8. 1/2 cups - chopped walnuts

Directions:

1. Heat oven to 350°F. Unroll piecrust onto floured surface. With 2-7/8" cutter, cut out rounds (about 34), rerolling scraps as needed. Place on greased baking sheet. Bake 10 min. Cool.

2. Meanwhile, in bowl, combine onions, thyme, and vinegar; season with salt and pepper. In separate bowl, combine cranberry sauce, 1 Tbs orange juice, and 1/4 tsp. orange zest.

3. Divide onion mixture amonth piecrust rounds (1 tsp. each); sprinkle with blue cheese. Top with cranberry mixture and nuts. Bake 3 min. or until heated. Serve warm or at room temp.
