Blueberry Cream Cheese Pie

Ingredients:

  1. 1 packages - 8 oz. cream cheese softened
  2. 1/2 cups - sugar or honey
  3. 1 whole - baked pie shell
  4. 1 teaspoons - grated lemon rind
  5. 2 tablespoons - lemon juice
  6. 2 tablespoons - cream or milk
  7. 3 cups - blueberries
  8. 1 cups - sugar or honey
  9. 3 cups - blueberries
  10. 3 tablespoons - cornstarch

Directions:

Mix the cream cheese, sugar or honey, lemon juice, rind, and cream or milk together. Cream until of whipped cream consistency. Line the pie shell with the cheese mixture. Fill with fresh whole berries and cover with blueberry glaze.

Blueberry Glaze:
Mash berries with the sugar or honey and let stand for 30 minutes. Mix with the cornstarch and cook until thick and clear. Cool. Pour over berries and refrigerate.
