Blueberry Pie

Ingredients:

  1. 1 whole - Pie Crust for 10" pie
  2. 2 cups - flour
  3. 1 teaspoons - salt
  4. 2/3 cups - shortening
  5. 3 tablespoons - butter or margarine
  6. 1/3 cups - cold water
  7. 6 drops - yellow food coloring
  8. 3 1/2 cups - frozen blueberries
  9. 2/3 cups - sugar
  10. 2 tablespoons - flour

Directions:

Combine food coloring and shortening. Cut shortening and butter into flour and salt with pastry blender until particles resemble coarse crumbs. Reserve 1 cup. Sprinkle water over flour mixture stirring with fork until dough is holding together. Roll out, fit into pie plate. Microwave at high for 5-7 minutes, rotating every 3 minutes.

Pie Filling:
Combine all ingredients; turn into pie shell. Sprinkle with 1 cup reserved crumbs. Set pie on wax paper in oven, microwave at high 14 to 18 minutes, until berries are tender, rotating 1/4 turn after 6 minutes, then every 3 to 4 minutes.
