Ingredients:
- 1 whole - Oatmeal-Almond Pie Crust for 9" pie
- 1 1/2 cups - cups oatmeal ground to flour grind in food processor with chopping blade
- 1/2 cups - water for soft dough
- 3/4 cups - ground almonds
- 1/4 teaspoons - salt
- 3 cups - unsweetened pineapple juice
- 1/4 cups - granulated tapioca
- 1/4 cups - cornstarch
- 3 cups - fresh or frozen blueberries
Directions:
Mix the first three ingredients and then add water. Mix lightly and dust with oatmeal flour. Roll out crust dusting with the oatmeal flour and put in pie pan. Bake at 375 degrees for 10-15 minutes monitoring carefully. It should be slightly brown. Cool before adding the cooled filling.
Blueberry Pie Filling:
Mix tapioca and cornstarch with 1 cup of juice and stir until smooth. In stainless steel pot, heat remaining 2 cups of juice and blueberries until hot, but not boiling. Add dissolved thickeners at his time. Stir constantly over medium heat until mixture becomes clear and thick (about 10 min.) DO NOT BOIL. Set aside to cool at room temp. for 45 minutes. Add additional 2-4 cups of fresh or frozen berries and pour into cooled pie crust.
