Ingredients:

  1. 2 tablespoons - butter
  2. 2 - boneless, skinless chicken breasts
  3. - salt and lemon pepper
  4. 1 cups - fresh cut asparagus tips
  5. 1 1/2 cups - white wine
  6. - several sprigs fresh rosemary
  7. 3/4 cups - half-and-half OR light cream
  8. 1 teaspoons - white pepper or more, to taste
  9. - flour for thickening, as needed
  10. - cherry tomatoes
  11. - Parmesan cheese
  12. - cooked brown rice or Uncle Ben's white and wild rice mixture
  13. - asparagus spears for garnish

Directions:

On medium heat in a skillet, melt butter and lightly brown seasoned chicken breasts (seasoned with salt and lemon pepper). Cover with lid and steam in butter until chicken is done and tender (about 10 minutes). Remove chicken breasts to a paper plate to rest.

Add fresh cut asparagus tips and saute in skillet for 2 to 3 minutes. Add white wine and fresh rosemary to the butter, broth and asparagus remaining in the skillet and boil a few minutes until slightly reduced. Remove from heat.

Pour half-and-half into wine mixture; add white pepper until slightly spicy. Return to low heat and reduce. If needed, thicken slightly with a flour thickening mixture (shake 2 tablespoons flour in 1/2 cup water in jar until smooth); slowly add to wine mixture until you obtain the desired thickness, stirring with a whisk.

Meanwhile, steam fresh asparagus spears in microwave -- Trim, wash and lay in a Pyrex dish with a few tablespoons of water. Cover with plastic wrap. Vent one corner. Microwave for approximately 5 minutes.

Broiled Cherry Tomatoes for Garnish: Place tomatoes stem-side down; slice off the tops and sprinkle with Parmesan cheese. Broil until slightly browned. Use to garnish prepared plate of food.

Serve chicken breast on bed of steamed brown rice covered with asparagus sauce and garnished with asparagus spears and broiled cherry tomatoes.
