Broiled Vegetables and Bell Peppers in Sauce

Ingredients:

  1. 1 - large onion cut in wedges
  2. 2 - medium beets
  3. 2 - sweet potatoes cut up
  4. 1 - red bell pepper cut into strips
  5. 1 - yellow bell pepper cut into strips
  6. 4 - portobello mushrooms
  7. - olive oil spray
  8. 3/4 teaspoons - salt
  9. 1/2 teaspoons - pepper
  10. 1 - batch of yogurt cheese
  11. 1 tablespoons - fresh lemon juice
  12. 1 teaspoons - minced garlic

Directions:

In blender, puree the yogurt cheese, lemon juice and minced garlic; set aside.

Mix vegetables in large bowl, and spray with olive oil. Sprinkle with salt and pepper.

Broil 6 minutes per side. Remove to platter.

Top with pureed yogurt cheese, lemon juice and garlic.
