Ingredients:
- 1 whole - Onion Chopped
- 3 whole - Carrots Peeled & Chopped
- 2 whole - Garlic Cloves Minced
- 1 whole - Medium Bitternut Squash Peeled, Seeded, Chopped
- 4 cups - Broth Vegetable or Chicken
- 2 whole - Apples Peeled, Chopped
- 1/2 teaspoons - Cinnamon
- 1/4 teaspoons - Ground Nutmeg
- 2 tablespoons - Maple Syrup
Directions:
1. Add everything to the slow cooker and cook on low for 6-8 hours until squash is completely tender.
2. Use an immersion blender to blend to a smooth consistency. You could also use a regular blender and blend in batches. Taste and season with salt and pepper.
