Camper's Breakfast Hash

Ingredients:

  1. 1/4 cups - butter cubed
  2. 20 ounces - refrigerated shredded hash brown potatoes
  3. 7 ounces - brown and serve sausage links cut into 1/2 in pieces
  4. 1/4 cups - onion chopped
  5. 1/4 cups - green pepper chopped
  6. 12 - eggs lightly beaten
  7. - salt
  8. - pepper
  9. 4 ounces - cheddar cheese shredded

Directions:

In a large skillet, melt butter. Add potatoes, sausage, onion, and green pepper. Cook, uncovered over med heat for 10-15 mins or until potatoes are lightly browned, turning once. Push potato mixture to the sides of pan. Pour eggs into center of pan. Cook and stir over med heat until eggs are completely set. Season with salt and pepper. Reduce heat; stir eggs into potato mixture. Top with cheese; cover and cook for 1-2 mins or until cheese is melted.
