Sweet Potatoes w/ Pecans

Ingredients:

  1. 4 - Sweet Potatoes (large)
  2. 1 cups - Brown Sugar
  3. 1 tablespoons - Vanilla
  4. 8 tablespoons - Butter
  5. 1/2 cups - Water
  6. 2 - Eggs (large)
  7. - Marshmallows
  8. - Pecans
  9. 1/2 cups - Milk
  10. 1/2 teaspoons - Salt

Directions:

Sweet Potatoes
------------------

Preheat oven to 350 Degrees, & grease a 9 x 13 baking dish. Place Sweet Potatoes in a large pot & cover with water. Bring to a boil, then reduce heat & simmer until the sweet potatoes are tender; about 15 minutes. Drain. Let Sweet Potatoes cool slightly, then transfer them to a large bowl.

Stir together Sweet Potatoes, Brown Sugar, Butter, Vanilla, Milk, Eggs & Salt. Stir until smooth & pour into the prepared dish.

Streusel Topping

In a Medium bowl, stir together Brown Sugar, Flour, & Butter until it clumps. Stir in Pecans & spread them evenly over the Sweet Potatoes. Top with marshmallows.

Bake at 350 Degrees, for 30 minutes, or until marshmallows are golden brown.
