Make-ahead tip: Prepare the batter and pour into greased crumb-coated ramekins. Cover and refrigerate up to 24 hours. Let sit 1 hr. at room temp. before baking.

Ingredients:
- 1 cups - chopped peeled apples
- 1 tablespoons - minced canied ginner
- 2 tablespoons - butter melted
- 1/2 cups - + 1 Tbs. flour divided
- 3 tablespoons - gingersnap cookie crumbs
- 4 - large eggs
- 1/2 cups - light brown sugar
- 3/4 cups - salted caramel topping
Directions:
1. Heat oven to 425°F. In microwave-safe bowl, microwave apples and ginger, covered, 3 min., stirring once. In bowl, combine butter and 1 Tbs flour; brush inside of six 6-oz oven-safe cups or ramekins with mixture. Coat greased cups with cookie crumbs.
2. In processor, puree eggs 1 min. or until frothy. Pulse in brown sugar, salted caramel topping, and remaining flour. Add egg mixture to bowl with apples; stir to combine.
3. Divide mixture evenly among prepared cups; place on baking sheet. Bake 12 min. or until edges are cooked but center is wobbly. Let sit 3 min. Loosen sides of cakes with small spatula. Invert cakes onto serving plates.
