Carrot Casserole a la Woo

Ingredients:

  1. 2 cups - carrots (about 2 pounds) cooked
  2. 1 cups - cracker crumbs (Ritz or HiHo)
  3. 1 cups - milk
  4. 3/4 cups - grated cheddar chese
  5. 1 cups - soft butter 1 cup = 2 sticks
  6. 1/4 cups - chopped onion grated or chopped fine
  7. 1 teaspoons - salt
  8. 1/4 teaspoons - pepper
  9. 3 - eggs slightly beaten

Directions:

Cook and mash carrots before mixing with other ingredients.

Grease or butter a baking pan; place casserole mixture into pan and bake at 350 degrees F for 1 hour.
