Cauliflower Alfredo with Peas

Ingredients:

  1. 3 cloves - Garlic Roughly chopped
  2. 1 heads - Cauliflower Stem and leaves removed, roughy chopped
  3. 1 cups - Chicken or vegetable broth
  4. 1/2 teaspoons - Salt
  5. 1 tablespoons - Unsalted Butter
  6. 1 cups - Milk
  7. 1/2 cups - Finely grated parmasan
  8. 450 grams - Fettuccine
  9. 1 cups - Frozen or canned peas
  10. 1 teaspoons - Chopped fresh parsley to garnish, optional

Directions:

Place garlic, cauliflower , and broth in a large saucepan with a lid. Bring to a boil, reduce heat to medium-low and cook for 8-10 minutes (or until cauliflower is tender and soft).
2. Carefully transfer contents of saucepan blender or a food processor (blending will result a smooth consistency).
3. Add salt, butter, half the milk and parmesan cheese. Blend on high until desired consistency is reached (I prefer a smooth texture). Add remaining milk if sauce of too thick. Taste and season with more salt if required.
4. Meanwhile, cook the fettuccine as per package instructions, adding peas with 1 minute left in the cooking time. Drain pasta and peas. Toss with cauliflower alfredo sauce.
5. Garnish with more parmesan and/or chopped fresh parsely if desired.
