Ingredients:
- 1 - small head cauliflower broken into flowerets
- 8 - medium tomatoes
- 2 tablespoons - butter
- 1 - green onion finely chopped
- 2 tablespoons - flour
- 1 cups - milk
- 1 1/2 cups - shredded cheddar cheese
- 1/2 teaspoons - salt
- 1/4 teaspoons - pepper
- 2 tablespoons - breadcrumbs
- - parsley sprigs for garnish
Directions:
Cook cauliflower in boiling water just until tender, about 8 minutes; drain.
Remove tops and centers from tomatoes; turn upside down to drain.
Melt 1 tablespoon butter in small saucepan. Add onion and cook until soft, about 2 minutes; add flour and cook, stirring, 1 minute. Slowly stir in milk. Cook on medium heat until thickened, about 3 minutes. Remove from heat; stir in cheese and 1/4 teaspoon salt.
Season inside of tomatoes with remaining salt and pepper. Place in shallow baking dish just large enough to hold tomatoes upright. Bake at 400 degrees F until hot, about 3 minutes.
Fill each tomato with 2 tablespoons sauce, then cauliflower pieces. Spoon remaining sauce over top.
Melt 1 tablespoon butter in skillet; add breadcrumbs and cook until lightly browned, about 1 minutes. Sprinkle over tomatoes.
Bake tomatoes 5 minutes or until hot. Transfer to heated serving platter; garnish with parsley sprigs.
