Cheese Cake Keto

Ingredients:

  1. 16 ounces - Cream Cheese room temp
  2. 1 cups - Almond Flour
  3. 4 tablespoons - Butter
  4. 2 tablespoons - Vanilla Extract
  5. 2 - Eggs
  6. 1/2 cups - Swerve
  7. - Sea Salt
  8. 2 tablespoons - Swerve (for crust)
  9. 1 tablespoons - Ground Cinnamon

Directions:

1. Set the bricks of cream cheese out on the counter for at least one hour before you start so it can soften.
2. Preheat Oven to 350.
3. In a medium glass bowl melt the 4 tablespoons (half a stick) of butter, and mix in 1 cup of almond flour with a fork.
4. Add 1 tablespoon of cinnamon and 2 tablespoons of Swerve.
5. Press crust into pan. Bake for about 5 minutes in 350 degree oven.
6. In large bowl blend cream cheese until evenly whipped.
7. Add 2 tablespoons of vanilla, 2 eggs, 1/2 cup Swerve and a dash of sea salt. Blend.
8. Spoon mixture over crust.
9. Bake on middle rack for 20 minutes. Do not brown top.
10. Remove and cool on counter for 20 minutes. Then place in the refrigerator overnight.
