Cheese Shells 2 Shells (per serving = Y2 lean) (each shell has% cup cheese) 'A cup low fat mixed cheese (per serving) Meat Filling Y2 cup Cauliflower rice = 1 green 2.5 oz cooked hamburger meat crumbled (96% fat free) = Y2 lean 1 tablespoon enchilada sauce (Trader Joe's or Old El Paso, they have the same breakdown) = 1 condiment 1 tablespoon light cream cheese softened = 1/2 condiment

Preheat oven to 350 degrees. Spray non- stick spray on parchment paper (or aluminum foil) that is on a baking sheet.
Place your cheese shells in oven and bake approximately 10 minutes. Shells need to brown around edges and cheese needs to melt but do not overcook.
Make cauliflower in microwave oven for about 1 minute. (Just a bit). Set aside when done. Mix all meat filling ingredients together with the slightly cooked cauliflower rice. Keep Warm.
When cheese shells are done — Carefully divide your meat filling between the 2 shells and roll tightly. At this point warm an additional Y2 tablespoon of enchilada sauce (1/2 condiment) for each enchilada and put on top of the rolled enchilada. Serve immediately.
