Cheesy Cauliflower Soup

Ingredients:

  1. 1/2 cups - butter or 1 stick
  2. 1/2 cups - flour
  3. 3 cans - chicken broth 14 oz. each
  4. - cauliflower chopped
  5. 1 - small onion diced
  6. 1 teaspoons - pepper
  7. 1 cups - heavy cream or 1/2 pint
  8. 3 cups - shredded cheddar cheese or 12 oz.

Directions:

Melt the butter and flour and cook until browned; set aside.

Combine broth, cauliflower, onion, and pepper over high heat. Boil; reduce to low. Cover and simmer for 30 minutes until cauliflower is tender.

Stir in butter mixture until thickened.

Slowly stir in cream and mix well.

Add cheese 1 cup at a time, mixing well after each addition. Cook until cheese is melted.
