Cheesy Mexican Chicken - Keto

Ingredients:

  1. 1 tablespoons - Butter
  2. 1/4 cups - diced onion
  3. 1/3 cups - diced green pepper
  4. 3 cloves - garlic, minced
  5. 2 cups - cooked chicken, shredded
  6. 1 cans - Rotel
  7. 12 ounces - steamed riced cauliflower
  8. 2 tablespoons - taco seasoning
  9. 3/4 cups - chicken broth
  10. 1 1/2 cups - cheddar cheese
  11. 1/2 cups - Monterrey jack cheese

Directions:

Melt butter, then sautee onion, pepper and garlic until softened
Steam cauliflower rice according to package directions
Add taco seasoning, rotel, chicken broth, green chilis and cauliflower rice to pan
Stir to combine and cook on medium/low about 10 minutes until extra liquid is absorbed
Add chicken and stir well. If mixture gets too thick, add chicken broth.
Simmer on low covered for 5 minutes
Sprinkle cheese on top. Cover and simmer until cheese is melted
