Cheesy Vegetable Chowder

Ingredients:

  1. 2 tablespoons - butter
  2. 1/2 cups - onion chopped
  3. 2 cups - carrots finely chopped
  4. 1 tablespoons - minced garlic
  5. 4 cups - low sodium chicken broth
  6. 2 - large potatoes peeled and chopped
  7. 1 tablespoons - flour
  8. 1/2 cups - water
  9. 2/3 cups - milk
  10. 2 cups - chopped broccoli
  11. 2 cups - shredded cheddar cheese

Directions:

Melt butter in large soup pot. Add onions & carrots; saute over medium heat until tender.
Add garlic and cook for 1-2 additional minutes.
Add chicken broth and potatoes; bring to a boil and cook until potatoes are tender.
Mix flour and water, add and simmer until soup is slightly thickened.
Add milk and broccoli and cook until broccoli is just tender and soup is heated through.
Stir in cheese, allow to melt and serve.
