Ingredients:
- 1 cups - uncooked rice, white or brown
- 1 jars - capers
- 8 ounces - Chicken Broth
- 2 pieces - Boneless skinless chicken breasts
- 1 whole - small onion
Directions:
1. Start the rice cooking, preferably in a rice cooker.
2. While the rice is cooking dice the onion.
When the rice has about 20 minutes left:
1. Warm olive oil to high heat and season chicken breasts to taste with salt and pepper and additional spices.
2. Brown the chicken breasts a couple of minutes on each side.
3. Remove from heat and discard oil.
4. Sautee the onion using butter or a healthy cooking spray.
5. When onions are ready, add broth. Then stir in capers. Add chicken back in.
6. Bring to a boil.
7. Reduce heat to a simmer. Cook until the chicken is done, around 10-15 minutes.
Serve over rice.
