Ingredients:

  1. 2 tablespoons - oil
  2. 8 ounces - frozen spinach thawed
  3. 2 cloves - garlic crushed
  4. 1 teaspoons - nutmeg
  5. 3 bunches - watercress
  6. 1 ounces - parsley
  7. 5 cups - mayonnaise
  8. 1 1/4 cups - chicken stock
  9. 4 - whole chickens (5 lbs. each) cooked, boned, cut into pieces

Directions:

Saute spinach and garlic in oil; add nutmeg. Cool.

Process watercress and parsley with steel blade, adding spinach and mayonnaise. Add chicken stock, salt and pepper to taste.

Toss chicken and sauce and garnish with watercress.
