Chicken and Rice

Ingredients:

  1. 2 pounds - boneless, skinless chicken breasts or 3 pounds, as you prefer
  2. - water to cover
  3. 1 stalks - celery chopped
  4. 1 - large onion chopped
  5. 3 - carrots cleaned, chopped
  6. - chicken bouillon or chicken stock/broth
  7. 3 cups - uncooked brown rice or 4 cups, as needed
  8. 4 - boiled eggs chopped
  9. - salt and pepper to taste

Directions:

In a large stock pot, boil chicken in water; when done, remove from pot and chop chicken into bite-sized pieces.

Add more water (or stock/broth) to pot to fill it 3/4 way full. Add in chopped vegetables and bouillon.

Boil until veggies are tender. Depending on amount of water in the pot, add in 3-4 cups of uncooked brown rice; boil until rice is done.

Add in the chopped eggs; add salt and pepper to taste.
