Chicken Asparagus Divan

Ingredients:

  1. 2 whole - chicken breasts split in half
  2. - butter for cooking with
  3. 1/2 cups - chicken broth
  4. 1/4 cups - chopped scallions
  5. 2 tablespoons - flour
  6. 1 teaspoons - salt
  7. 1/4 teaspoons - pepper
  8. 1 cups - light cream
  9. 1/4 cups - dry white wine
  10. 1/4 cups - grated Swiss cheese
  11. 1 pounds - fresh asparagus cooked
  12. 1/4 cups - grated Parmesan cheese

Directions:

Wipe chicken breasts with damp paper towels. Cut breasts in two, and remove skin.

Saute in butter for 10 minutes on each side; add chicken broth, and simmer for 10 minutes.

Meanwhile, saute scallions in 3 tablespoons of butter. Add flour, salt and pepper; stir until smooth. Add cream, then wine. Bring to a boil, and simmer for 3 minutes. Remove from heat; add Swiss cheese.

Place asparagus in buttered baking dish; place chicken on top. Add sauce and sprinkle with Parmesan cheese.

Bake for 15 minutes.
