Ingredients:
- 2 - Large Boneless Skinless Chicken Breasts
- 1 ounces - Cans of Reduces Sodium Great Northern Beans drained and rinsed
- 1 ounces - Bag of Sweet Golden Corn drained and rinsed
- 1 ounces - Can of Chipped Green Chilis
- 4 cans - Reduced Sodium Chicken Broth
- 1 - Large White Onion chopped
- 3 - Garlic Cloves minced
- 1 - Yellow Bell Pepper chopped
- 1 cups - Lemon Juice
- 1 teaspoons - Cumin
- 1/2 teaspoons - Onion Powder
- 1/2 teaspoons - Garlic Powder
- 1 1/2 teaspoons - Chili Powder
- 1/4 teaspoons - Cayenne Pepper
- - Black Pepper to taste
- - Paprika to taste
Directions:
Place chicken breasts, great northern beans, corn green chilis, chopped onion, minced garlic, and spices in the crockpot. Add chicken broth and pour the lemon juice over the mixture. Cook on low for 6 to 8 hours.
Before removing from crockpot, use two forks to shred the chicken, Stir ingredients thoroughly. Serve with toppings as desired. I enjoy mine with crushed tortilla chips, reduced fat shredded cheese, and hot salsa!
