Chicken Florentine in White Wine Cream Sauce

Ingredients:

  1. 5 ounces - (1/2 pkg) fresh spinach leaves
  2. 1 packages - Uncle Ben's wild rice or brown rice
  3. 4 - chicken breasts
  4. - olive oil
  5. - lemon pepper
  6. 1 cups - white wine
  7. 1/2 cups - heavy cream

Directions:

Steam spinach leaves and set aside.

Steam rice according to package directions.

Saute chicken breasts in skillet, lightly coated with olive oil. Season with lemon pepper. Cover and let steam on medium heat for approximately 10 minutes; uncover and cook until lightly browned. Remove from pan.

Add wine to pan juices and boil. Add heavy cream and boil until reduced and slightly thickened. Add cooked chicken breasts to sauce and heat.

Serve by layering a bed of rice, spinach, chicken breast, and top with cream sauce.
