Ingredients:

  1. 1 - tsp. olive oil
  2. 2 cloves - garlic finely chopped
  3. 1 - (4-oz) raw chicken breast boneless, skinless, pounded thin
  4. 1 - cup steamed spinach
  5. 1 - slice part-skim mozzarella (or provolone) cheese (about 1/2 oz.)

Directions:

Preheat oven to 400° F. 

Heat oil in oven-proof skillet over medium-high heat.

Add garlic; cook, stirring frequently, for 1 minute.

Add chicken; cook for 3 to 5 minutes on each side, or until no longer pink in the middle. Remove from heat.

Top chicken with spinach and cheese.

Bake for 2 to 3 minutes, or until cheese is melted.
