Chicken Fricassee with Shallots

Ingredients:

  1. 2 1/2 pounds - chicken cut up
  2. - salt and freshly ground black pepper
  3. 2 - shallots (or onion) thinly sliced
  4. 1/2 pounds - sweet butter
  5. 1 cups - dry white wine
  6. 1 cups - water
  7. 1 cups - cream
  8. - juice of 1/2 lemon
  9. 8 - scallions or more
  10. 12 - large shallots cooked in salted water for 3 minutes, then peeled
  11. 1 teaspoons - sugar
  12. 2 teaspoons - water
  13. 1/2 pounds - noodles

Directions:

Sprinkle chicken pieces with salt and pepper. Saute in 2 to 3 tablespoons of butter until brown. Reserve.

In same skillet, add more butter and sliced scallions for 1 minute; add wine and water and cook for 15 minutes. Add cream, lemon juice and chicken pieces. Cover and cook for 10 minutes.

Cut off white end of 12 scallions and blanch in salted boiling water for 5 minutes. Cut up green ends and slice very fine. Reserve.

In a heavy skillet, heat 4 tablespoons butter. Add cooked shallots and sprinkle with salt, pepper and teaspoon of sugar. Add 2 teaspoons water; cook over high heat for about 8 minutes until caramel colored. Add blanched scallions and cook for 2 more minutes.

Cook noodles until tender, drain and saute in 2 to 3 tablespoons of butter. Season with salt and pepper.

Place in middle of large serving platter with chicken pieces all around. Keep warm.

Reduce sauce and pour over chicken and noodles. Add shallots and scallions; sprinkle chopped green onion tops over all and serve hot.
