Chicken Liver Sauté

Ingredients:

  1. 2 tablespoons - Butter
  2. 1 - Onion - large chopped
  3. 4 cloves - Garlic chopped
  4. 2 ribs - Celery sliced
  5. 1/2 teaspoons - Thyme
  6. 1/4 cups - Mirin rice cooking wine
  7. 3/4 pounds - Chicken Livers cleaned and cut to bite size pieces
  8. 1/2 cups - Chicken Stock (can substitute water)
  9. 1/4 teaspoons - Sea Salt
  10. 1/2 teaspoons - Black Pepper
  11. 1/2 cups - Parsley - chopped

Directions:

Saute the onions, garlic and butter over medium-low heat adding thyme once some juices have released then cook until onions are translucent. Add mirin, chicken liver pieces, and stock. Season with sea salt and black pepper. Cook until most of the liquid evaporates stirring chopped parsley in just before serving over your choice of cooked whole grains.
