Chicken Parm

Ingredients:

  1. - chicken breasts
  2. 1 cups - gluten-free bread crumbs
  3. 2 tablespoons - minced garlic or to taste
  4. 1/4 cups - shredded Parmigiano-Reggiano
  5. - ground black or red pepper to taste
  6. - marinara sauce and grated or sliced mozzarella for topping

Directions:

Preheat oven to 350 degrees F.

Slightly flatten chicken breasts with meat mallet or skillet.

In a bowl, combine bread crumbs, garlic, shredded Parmigiano-Reggiano and pepper. Dredge chicken in mixture.

Line a baking dish with parchment for easy clean up. Bake chicken 20 minutes or until nearly cooked through.

Top with sauce of choice and sprinkle with grated cheese. Return to oven until chicken reaches 165 degrees F.

This recipe works well for small or large groups. Chicken may be cut in smaller portions before baking and for those who love, love, love cheese add a small slice of mozzarella cheese before topping with sauce.

Serve with a green salad and you won’t miss the pasta.
