I sub chicken thighs for breasts and skip the ricotta filling. Can buy your favortie marinara or make your own. Can add red pepper flakes to bread crumbs if you like a little heat!

Ingredients:
- 6 - Boneless skinless chicken thighs
- 1/2 teaspoons - Kosher salt
- -
- 8 - Large basil leaves Shredded
- - Back pepper Freshly ground
- - All purpose flour For dredging
- 2 cups - Dry breadcrumbs
- 2 - Large eggs
- - Vegetable oil for frying
- 4 cups - Marinara
- ounces - Low moisture mozzarella Thinly sliced
Directions:
Preheat oven to 425.
Season chicken with salt.
Dredge chicken in flour, tapping off excess.
Dip chicken in egg and then coat on all side with breadcrumbs. Panko is a good brand.
Heat 1/2 inch oil in large skillet over medium heat. Add chicken and cook in batches if necessary, till brown and crispy, about 4 minutes per side. Drain on paper towels.
In a baking dish large enough to fit chicken in one layer spread 1 1/2 cups marinara and lay chicken on top. Top with remaining marinara .
Layer sliced mozzarella on chicken and sprinkle grated cheese. Serve with shredded basil on top.
Bake until chicken cooked through, 20-25 minutes.
