Ingredients:
- 12 ounces - Chicken sausage
- 8 ounces - to 10 oz. whole wheat egg noodles
- 6 - to 8 small sweet peppers
- 1/2 heads - Broccoli
- 1 - Carrot
- 1 tablespoons - Olive Oil
- - Grated Parmesan to season
Directions:
Cook pasta according to package directions, drain.
Dice peppers and sausage into small bite sized pieces.
Place half of the olive oil in a large saucepan over medium high heat. Once oil is hot add peppers and saute until they start to soften. Add broccoli, chicken sausage, garlic, seasonings, saute for 10-12 minutes.
Wash and peel all outer skin off carrots, then use peeler to shave entire carrot into pan; cook an additional 3- 5 minutes. Toss pasta and remaining oil into pan and stir to combine and to heat through.
Remove from heat and top with a generous sprinkling of parmesan cheese to season. Serve with bread for a complete meal.
