Chipped Beef Puffy

Ingredients:

  1. 1/4 pounds - dried chipped beef
  2. 1/2 sticks - oleo
  3. 3 tablespoons - flour
  4. - black pepper
  5. 2 cups - milk
  6. 2 tablespoons - diced pimiento
  7. 1 cans - 3 oz. sliced mushrooms drained
  8. 3 - eggs
  9. 1/2 teaspoons - salt
  10. 1/3 cups - shredded cheese

Directions:

Cut beef into strips and saute in oleo. Blend in flour and pepper. Stir milk in slowly and cook until thick.

Add mushrooms and pimiento and pour into baking dish. Keep hot in oven at 350 degrees F.

Meanwhile, separate eggs. Beat the whites and salt until stiff. Beat yolks together and fold into the whites. Fold in the cheese and spoon over dried beef mixture.

Bake for 20 minutes until golden.
