Chopped Black Bean-Avocado Salad

Ingredients:

  1. 2 tablespoons - lemon juice
  2. 1 tablespoons - whole-grain mustard
  3. 2 tablespoons - olive oil
  4. 1 cups - canned black beans rinsed & drained
  5. 1 cups - fresh or frozen corn thawed
  6. 1 - avocado diced
  7. 1/2 cups - diced sweet red papper
  8. 1/2 cups - coarsely chopped cilantro
  9. 1/4 cups - diced celery
  10. 2 - green onions trimmed & thinly sliced

Directions:

Whisk together lemon juice and mustard in large bowl. Add oil, and whisk until smooth. Add all remaining ingredients, and gently toss to combine. Season with salt and pepper, and serve.
