You can substitute any cooked bean in this recipe. I used pintos and it was delicious. If using fresh rosemary double the amount.

Ingredients:
- 1 - onion chopped or sliced thickly
- 2 cloves - garlic chopped
- 1 1/2 cups - stewed tomatoes with juice
- 1 - large sweet potato peeled and cut into half inch pieces
- 1 cups - White kidney beans or garbanzo beans
- 3/4 teaspoons - dried rosemary
- 1 - medium zuchinni cut in half inch thick rounds
- 2 teaspoons - red pepper flakes
Directions:
Saute onion in water or a small amount of oil about 5 minutes then add garlic and cook another minute or two. Add the rest of the ingredients and simmer covered for about 30 minutes or until the potatoes are soft. (Check every 15 to 20 minutes and add a bit of water if needed to keep from burning) When it is done let it rest for 5 or 10 minutes before serving.
