Of course, all measurements are relative and subject to Carroll judgement. Would also be great with firm tofu, just make the sauce a little thinner and place cubed tofu in the sauce, one quick stir, top on the skillet, and let the tofu heat up. It's important not to mix too much because the tofu fall apart.

Ingredients:
- 1 cloves - garlic
- 1/2 cans - Coconut Milk
- 1/2 cups - Almond butter
- 2 tablespoons - soy sauce
- 1 dashes - Onion powder
- 1 dashes - Garlic powder
- 2 cloves - garlic
- 2 pinchs - cayenne
- 2 pinchs - turmeric
- 2 pinchs - basil
- 1 pinchs - oregano
- 1 dashes - sesame oil
- 1/2 heads - lime
- 1 tablespoons - honey
- 1 dashes - cumin
- 4 pieces - cubed chicken thighs
- 1 dashes - salt
- 1 dashes - pepper
- 1 cloves - garlic
- 1 cups - white rice
- 1/2 whole - onion
- 1 whole - cubed avocado
- 1/2 cups - corn
- 1/2 cups - peas
- 1 cups - cubed mushrooms
- 1 whole - diced red pepper
Directions:
Chicken thighs cubed up and cooked with salt pepper and add some garlic right at the end
Take the chicken out and put it on a plate
Make the sauce and let it bubble up- adding water as necessary to keep it thin and remember that the sauce will get substantially thicker after you turn off the heat!
Put chicken back in
I served it with white rice with peas and corn and mushrooms/onions/red pepper sautéed with garlic and salt and pepper
Avocados to top it off and a lime wedge to squeeze extra lime juice
