    Original recipe called for 4-5 cups of carrots. The sauce is a lot & I found I like to add the extra carrots, than through away sauce. The olive oil gives a special flavor that I like, plus is healthier.

Ingredients:

  1. 8 cups - about 5-6 lbs Carrots sliced thin at a angle
  2. 1 cans - Tomato Soup
  3. 1 - Bell Pepper optional
  4. 1 - small onion chopped
  5. 1/2 cups - salad Oil or Olive Oil
  6. 1 cups - Sugar
  7. 3/4 cups - Vinegar
  8. 1 teaspoons - Salt
  9. 1 teaspoons - Pepper or less to taste
  10. 1 teaspoons - mustard your choice as to type
  11. 1 teaspoons - Worchestershire Sauce

Directions:

Cook carrots but leave firm (no more than 8 mins). Drain, cool.
Chop pepper & onions & add to cooled carrots.
Mix all the other ingredients together & stir into carrots.
"KEEPS WELL" Best to let sit over night for flavors to blend.
