Ingredients:

  1. 1 1/2 cups - yellow corn meal
  2. 1/2 cups - flour
  3. 1 teaspoons - baking powder
  4. 1 teaspoons - baking soda
  5. 1 teaspoons - garlic powder
  6. 1 teaspoons - salt
  7. 1 1/4 cups - buttermilk up to 1/4 cup more, as needed
  8. 1 - egg
  9. 3 tablespoons - vegetable oil

Directions:

Preheat oven to 425 degrees F.

Mix dry ingredients together. Add milk and egg. Mix well.

Heat oil in skillet; pour 1/2 oil into batter and mix. Add flour to remaining oil and stir. Pour batter into the skillet.

Bake 20 to 30 minutes (or for muffins / cupcakes, bake 15 minutes).
